Red Jewel Cookies



Ingredients A:
200g butter
60g sugar
1pc egg
1tsp vanilla essence

Ingredients B:
260g plain flour (sifted)
1tsp baking powder (sifted)
1pc egg white
160g icing sugar (sifted)
1tsp corn flour (sifted)
Jam adequate

Methods:

1. Cream ingredients A for 3 minutes. Add ingredients B and mix well. Chill for 30 minutes.
2. Roll dough between 2 sheets of grease-proof paper till 0.5cm thick. Cut with a circular-shaped cookie cutter.
3. Places cookies on a greased baking tray.
4. Beat egg white till peak forms. Fold in sifted ingredients.
5. Use a piping bag to pipe the meringue in circle on top of each cookie.
6. Bake at 170ºC for 15 to 20 minutes until golden brown.

Note:

Apply jam only when you serve these biscuits so as to facilitate easier storage
